Here's a delicious recipe, yet so simple, for vegan apple pie. I've wanted to share some vegan recipes on my blog for a long time now, so finally here's the first one! If you're a real pie eater (like me) then you can double the recipe for the pie crust. Just bake the pie 10 minutes longer. How to know if the pie is ready: the crust is not doughy and the apples (the fruit) are well cooked and soft to the touch. Don't burn yourself! Use a fork... no fingers... * Use Granny Smith apples if you can find some - they have a more firm and sour fruit flesh, which make a great contrast to the sweetness. Of course can you change the fruit. Take what are in season. Plums, pears, blue berries, raspberries, cherries - you name it! Whatever you prefer. Also, be creative with your toppings! Use sliced almonds, walnuts, pecans, dried banana chips, raisins, sea salt...? * I've changed the original recipe a little bit: instead of blending the ingredients in a regular bowl, I took a large sauce pan over the stove. The heat melts the shortening together with the sugar and make your whole kitchen smell like caramel - yum! By the way; this is a crumble pie recipe. You can choose to first place a layer of dough in the bottom or not. Like I told you: just double the recipe. And don't be afraid to use your hands when you're gonna crumble the dough over the pie! That's the BEST part!! Just get your hands in there, baby! Feel it! * This photo shoot took place at my school with my friends that live in the same corridor. (I live and study for the moment at an art/design school in Sweden). So when you don't have all the equipment you're used to, then your got to improvise! We had a really good time tho. * This pie is not just vegan. It's also egg-free and dairy-free. Thumbs up! Serve the pie with vegan ice cream - melts delicious over your slice of pie! ♫ *

Serves about 10-12 people Ingredients: • 250 grams dairy-free margarine (vegan) • 5 decilitres (2 cups) plain flower • 2 decilitres (almost one cup) oatmeal (gives a good texture!) • 2 decilitres (almost one cup) caster sugar (you can also use brown sugar = caramel flavour ♥) • 2 tea spoons vanilla essence (optional) • 1 pinch of salt • 5-6 apples (about 750 grams) • 2 table spoons ground cinnamon
How to do: 1. Preheat your oven to 225° Celsius. Prepare a baking dish by greasing it with some vegan margarine, so the pie don't stick. The baking dish should be about 20 cm x 30 cm. 2. Melt the margarine in a large sauce pan over the stove. Don't burn it! Use a gentle heat, about low-medium. 3. Throw in the rest of the ingredients (not the apples and cinnamon!) and blend well with a wooden spoon. Your kitchen will be infused with a scent of caramel and a soft dough will form in your sauce pan. The dough should be slightly warm to the touch. 4. Take the sauce pan off the stove and let it cool a little bit. While you're waiting; prepare your apples. Wash, peel and slice your apples to chunk-bite pieces. 5. Place the apples in the prepared baking dish and sprinkle over the cinnamon. Then crumble the dough evenly on top. Now, you can add your toppings of choice; nuts, dried fruits or just leave it out. 6. Bake in the oven for 20-30 minutes, or until golden brown and the apples are cooked thoroughly. Done!
