How to make your own Lavender Sugar

Lavender sugar is perfect for flavoring if you want to make something sweet taste like lavender. Add it to the pancake batter, frostings, ice cream, cupcakes, shortbreads and so on. Whatever you like. English Lavender (l. angustifolia and munstead) has the sweetest fragrance of all the lavenders and is the one most commonly used in cooking and baking. * Do not use flowers from florists, nurseries or garden centers. In many cases these flowers have been treated with pesticides not labeled for food crops. I've used lavender flowers from my own garden this time! The scent is divine! *

Ingredients: • 5 deciliters (about 2 cups) caster sugar • 3 tablespoons dried lavender flowers, divided How to do: 1. Place the dried lavender flowers in the bowl of a food processor and blend it for 10-15 seconds to chop it into small pieces. 2. Add half of the caster sugar to the processor and blend well, for 15-20 seconds, until the lavender is finely ground and mixed into the sugar. 3. Whisk the lavender sugar together with the remaining sugar until the lavender is well dispersed. Store in a airtight jar for about 4 months. Done!

If possible, try to weigh your ingredients instead of measuring them. A small kitchen scale is great investment for a better baking result!

Always sift your cacao, flour, baking powder and other dry ingredients to avoid clumps in your batter or dough.

Grease and flour your baking diches and tins to avoid problems. Both the bottom and the sides. You can also line them with parchment paper.

Use ingredients that are brought to room temperture for best result. Place all of the ingredients on the kitchen counter for a hour or two before you start baking.
