Mini Meringue Drops

These little jewels are so adorable and you only need four ingredients! (Yay!) Eat them just the way they are or crumble them over some ice cream. :D * Use different colours to match your party and sprinkle with sprinkles ontop if you want to. This recipe comes from Sorted Food (they are awesome!), check them out on YouTube here. *

Ingredients: • 3 egg whites • 150 grams caster sugar • juice of half a lemon • food colouring gel (any colour you want) • sprinkles (optional) How to do: 1. In a clean, dry bowl, and with the help of an electric mixer, whisk up the egg whites until you have soft peaks. 2. Pour in the sugar and continue to whisk until stiff glossy peaks are reached and the sugar has dissolved into the whites. 3. Squeeze in the lemon juice, taking care to avoid any pips. 4. Brush the inside of a piping bag with the food gel. Spoon the meringue into the piping bag and snip of the end. 5. Pipe small blobs onto a baking paper lined tray so that they peak at the top. Sprinkle with sprinkles if you want. 6. Bake in a preheated oven at 125ºC for 1 hour until crisp on the outside but still slightly gooey inside. Allow to cool. Done!

If possible, try to weigh your ingredients instead of measuring them. A small kitchen scale is great investment for a better baking result!

Always sift your cacao, flour, baking powder and other dry ingredients to avoid clumps in your batter or dough.

Grease and flour your baking diches and tins to avoid problems. Both the bottom and the sides. You can also line them with parchment paper.

Use ingredients that are brought to room temperture for best result. Place all of the ingredients on the kitchen counter for a hour or two before you start baking.
