3D Rainbow Cupcakes ♥

These cupcakes are very simple to make, taste and look good and does not require any expensive ingredients. (Thumbs up for that!) Kids can even make them! Just look what you can do with some fun candy and imagination! * The frosting for this recipe is simple but delicious buttercream. But you can of course use cream cheese frosting or swiss meringue frosting if you want to (even whipped cream if you will serve the cupcakes the same day). Just dye it with blue gel food coloring. * If you're in a hurry then it will work perfectly fine to use store-bought cupcakes (does not taste as good as homemade, tho). I just want to share the main idea of how to make these cupcakes. *

Makes 12 cupcakes Ingredients: Cupcakes • 250 grams butter (unsalted) • 3 deciliters caster sugar • 4 eggs (free range - because we love chickens!) • zest of 1 lemon • 2 teaspoons vanilla • 5 deciliters all-purpose flour • 2 teaspoons baking powder Frosting • 200 grams butter (unsalted) • 3 deciliters icing sugar • 1 tablespoon of vanilla • a few drops of blue food coloring Decoration • sour rainbow belts candy • mini marshmallows (white) How to do: 1. Let's make the muffins first. Preheat the oven to 175° Celsius (350° Farhenheit). Line a cupcake pan with paper liners. 2. Beat the soft butter with the sugar so it becomes white and fluffy. 3. Mix in the eggs, one at a time. 4. In a separate bowl, sift together the dry ingredients. Then gently add it to the butter/egg mixture. At last, mix in the lemon zest as well. 5. Pour the batter in to the cupcake liners; about two-thirds full. 6. Bake in the center of the oven for about 20 minutes. Try with a toothpick if they are done. 7. While the muffins cool down, let's make the frosting. 8. Sift the icing sugar and add it to the soft butter. Beat it with an electric mixer for 3-4 minutes so it becomes white and fluffy. 9. Add the vanilla and the food coloring (we want a sky-blue color) and mix well. 10. Now comes the fun part: the decoration! Pipe or spread the frosting on the cooled muffins (if the muffins are still warm; the frosting will melt). 11. Cut the right length of the rainbow belts, bend them slightly and attach the ends into the butter cream. Apply the mini marshmallows to resemble clouds. Done!

If possible, try to weigh your ingredients instead of measuring them. A small kitchen scale is great investment for a better baking result!

Always sift your cacao, flour, baking powder and other dry ingredients to avoid clumps in your batter or dough.

Grease and flour your baking diches and tins to avoid problems. Both the bottom and the sides. You can also line them with parchment paper.

Use ingredients that are brought to room temperture for best result. Place all of the ingredients on the kitchen counter for a hour or two before you start baking.
