Swedish Waffle Day!

We have a very special day here in Sweden at the 25th March every year. We call it Våffeldagen ("Waffle day") and it is a Swedish tradition that goes back to the Middle ages. The name comes from Vårfrudagen ("Our Lady's Day"), which in Swedish sounds almost like Våffeldagen ("Waffle day"). Our Lady's Day is celebrated on March 25 (nine months before Christmas) at the Christian holiday of Annunciation. * Waffles are very popular in Sweden and we enjoy eating them as both dessert and breakfast. We can even eat them as a light dinner with toppings like sour cream, cold-smoked salmon and chopped red onion - we love them so much! *

Our waffles here in Sweden are usually made of a batter that is cooked between a heart-shaped waffle iron (see the picture below). Unlike Belgium waffles, Swedish waffles are made without yeast, so they are thinner and have a texture which is more like pancakes. * ​In the United States, National Waffle Day is celebrated August 24 (the date of a U.S. patent on a waffle iron). *

Here is a recipe for Swedish Sweetheart Waffles! Use a Swedish waffle iron if possible to get that characteristic thin heart shapes. Ingredients: • 90 grams butter • 200 grams all-purpose flour • 1 teaspoon baking powder • 1 teaspoon vanilla • 3 decilitres whole milk • 1 egg How to do: 1. Melt the butter, but don’t burn it. Leave it to cool slightly. 2. Mix the dry ingredients in a large bowl. 3. Gradually whisk in the milk and the melted butter. 4. At last, wisk in the beaten egg to form a smooth batter. 5. Leave the batter in the fridge for 30 minutes before frying. 6. Preheat your waffle iron. (Usually there is a pilot light which will go out when the waffle iron is up to temperature.) 7. Pour about 5 tablespoons of batter on the middle of the lower plate and close the lid. Press the lid for a few seconds so that the batter is spread evenly. (Do not press during the whole process as this will prevent the waffle from rising.) 8. Fry for about two minutes until the waffle is golden brown. 9. Serve the waffels while they're still hot with jam, whipped cream, fresh fruits or berries. Enjoy!

If possible, try to weigh your ingredients instead of measuring them. A small kitchen scale is great investment for a better baking result!

Always sift your cacao, flour, baking powder and other dry ingredients to avoid clumps in your batter or dough.

Grease and flour your baking diches and tins to avoid problems. Both the bottom and the sides. You can also line them with parchment paper.

Use ingredients that are brought to room temperture for best result. Place all of the ingredients on the kitchen counter for a hour or two before you start baking.
