Christmas Peppermint Brownies ♫

If you're a big fan of mint and chocolate then these brownies are perfect for you! I made these for Christmas and everybody loved them! You can of course use your favorite brownie recipe for this if you want to. *

Store the brownies in an air thight container with parchment paper in between, and they will be good for one week. You can also freeze them for up to two months the same way.

Makes about 12 brownies Ingredients: Brownies • 100 grams of unsalted butter • 2 eggs • 3 dl of caster sugar • 2 ½ dl of all-purpose flour • 6 tablespoons of cocoa • 1 tablespoon of vanilla • 1 pinch of salt • 100 grams of chocolate Topping • 400 grams of dark chocolate • 0,5 dl of heavy cream • 2 dl of peppermints candy How to do: 1. First make the brownies. Preheat the oven to 200 ° Celsius. Line a 25x25 cm baking dish with parchment paper. 2. Melt the butter in a saucepan over low heat. Set it aside to cool. 3. Whisk the sugar and the eggs together so they become white and fluffy. 4. Blend in the melted butter and then add the dry ingredients as well. 5. Melt the chocolate in the microwave or over a water bath. Let it cool slightly and then blend it in to the mixture. Make sure that there are no lumps. 6. Pour the mixture into the prepared baking dish and bake it in the oven for about 20-25 minutes. It should be sticky on the inside but still firm. Let the brownies cool completely in the baking dish, but do not cut out squares yet! 7. Now, let's do the topping! Melt the chocolate in the microwave or over a water bath. 8. Add the cream and mix it to a smooth and shiny mixture. Pour it over the cooled brownies and spread it out evenly. 9. Take the peppermints in a plastic bag and break them into small pieces with a rolling pin. 10. Sprinkle the crushed peppermints over the chocolate topping. 11. Let it all cool in the fridge for about 1 hour and then slice it into squares with a large and sharp knife. Done!

If possible, try to weigh your ingredients instead of measuring them. A small kitchen scale is great investment for a better baking result!

Always sift your cacao, flour, baking powder and other dry ingredients to avoid clumps in your batter or dough.

Grease and flour your baking diches and tins to avoid problems. Both the bottom and the sides. You can also line them with parchment paper.

Use ingredients that are brought to room temperture for best result. Place all of the ingredients on the kitchen counter for a hour or two before you start baking.
