American Pancakes

These pancakes are delicious and becomes even better with fresh berries, maple syrup, whipped cream, butter or nutella! We do not have baking powder in our pancakes here in Sweden, ours are more similar to the French Crêpes. * Use a non-stick frying pan if you have one. If you use too much fat in the pan, the pancakes will not have that smooth and even surface. To prevent this you can wrap a piece of butter in a paper towel, and then grease the pan. *

Makes approx. 20 pancakes Ingredients: • 3 eggs (free range - because we love chickens!) • 6 decilitres whole milk • 450 grams all-purpose flour • 170 grams caster sugar • 3 teaspoons baking powder How to do: 1. Whisk the eggs and milk together in a large bowl with an electric mixer. 2. Add the rest of the ingredients and whisk it all together. 3. Now, leave the batter to rise for 1 hour in room temperature. 4. Take a large spoon and beat the batter to a thick dropping consistency. 5. Heat a frying pan over high heat and grease it with some butter. 6. Use the spoon to dollop the batter on to the pan. 7. Leave the pancakes to cook until bubbles appear, then flip them over with a spatula. 8. Let the pancakes cook for another 2-3 minutes. They should be evenly brown on both sides. Done!

If possible, try to weigh your ingredients instead of measuring them. A small kitchen scale is great investment for a better baking result!

Always sift your cacao, flour, baking powder and other dry ingredients to avoid clumps in your batter or dough.

Grease and flour your baking diches and tins to avoid problems. Both the bottom and the sides. You can also line them with parchment paper.

Use ingredients that are brought to room temperture for best result. Place all of the ingredients on the kitchen counter for a hour or two before you start baking.
